What a nice warm cozy breakfast on a cool drizzly foggy Fall day, Banana pancakes!
Specifically drizzled with cashew butter and dipped in olive oil:).

So this healthy 4 ingredient recipe was inspired by a cozy rainy day sitting at home on an early Saturday morning dancing in the kitchen in an over sized tshirt. Just simple, quick, and delicious ingredients:
1 banana
1 cup of no sugar added applesauce
1 cup of flour
Splashes of unsweetened almond milk
Add all ingredients to a bowl and mash together with a fork until relatively smooth *see below.
Portion each pancake out onto a olive oil greased skillet and cook about a minute and a half on each side at roughly 340 degrees. Make varying sizes to stack with cashew butter in between. To make this dish a little more savory, dip the pancakes into olive oil and Himalayan sea salt and voila! You have the most delicious simple healthy banana pancakes there are around :).
*word of warning, they are a little chewy-er than the normal pancakes you are used to. Once you understand that, they are amazing! Enjoy!:)
